Sprinkle it on your tacos!
Add your adaptogens to a quick homemade lunch! This serves 2-3 people, each eating 2-4 street size tacos. Friendly for all spiciness levels. Total time for prep and meal presentation is 20-30 minutes.
INGREDIENTS
TACOS :::
Street taco size non-gmo organic corn tortillas (we like Mi Rancho’s taco sliders)
2 tbsp. avocado oil
1/4 bunch of cilantro; just the stems, finely chopped
1 medium size portobello mushroom, roughly chopped
1 regular size zucchini, roughly chopped
1/2 large purple onion, medium thick slices
1 tsp. ground cumin
1/4 tsp. garlic salt (or a couple pinches of pink salt and a 1/4 tsp of garlic powder, or 2 minced garlic cloves)
1 tsp. paprika
1 tsp. Anoint Daily adaptogens (any blend)
4 baby sweet peppers (whatever colors), roughly chopped
BEST PICO DE GALLO :::
2 tbsp. finely chopped purple onion
1 finely chopped Roma tomato
1 juice of lime
Cilantro leaves, finely chopped, (leaves from the above stems)
Splash of olive oil
Ground cumin, small pinch
1/2 small jalapeño, de-seeded & minced (increase seed count for increased spice)
INSTRUCTIONS
PICO DE GALLO :::
Place all ingredients in a bowl and stir; let sit in fridge while you prep the below taco filling.
TACOS :::
Place avocado oil in large cast iron (preferable) or on hand frying pan.
Add cilantro stems, mushroom, sweet peppers, zucchini, and garlic salt. Stir and cook for 5 minutes on medium high heat. Add a splash of water to steam the veggies. Add all spices and AD adaptogens. Cook for another 5-10 minutes on medium heat— to desired tenderness.
On a gas stovetop place each individual tortilla (one-by-one) on a burner at medium low heat for 30 seconds on each side.
(If you do not have a gas stove place tortilla on a small cast iron or small frying pan on medium high heat for 30 seconds on each side as well.)
Plate and serve as desired. (We like the warm tortillas on a plate, topped with the pico de gallo.) Add cheese or plant based cheese if desired! Sprinkle with a few pinches of your Anoint Daily adaptogens if you didn't add with the spices in the veggies. Eat slowly, joyfully amongst friends, or meditatively solo, and enjoy!
