We’re here for Soup Season!
I’ve been really enjoying these extra quiet, extra crisp Fall mornings, and getting re-inspired in the kitchen with soups galore!
This easy peasy roasted vegetable soup utilizes our current seasonal squashes and root veggies and herbs, and can be made to be for vegans or ominvores.
Soups are best made with whatever is fresh in your garden and in your fridge and pantry. Grab what’s handy, and let your creativity flow! (The below veggies are just suggestions.)
VEGGIE SOUP BASICS: broth, veggies, fresh or dried herbs, garlic, onion, avocado, coconut, or olive oil, salt, pepper. Cover, and bring all items to a boil in a big pot; once at a boil let cook for another 5-10 minutes depending how chunky your veggies are. Simmer for a half hour. Uncover and let sit for 10 minutes to cool. Serve in a bowl and enjoy!
I N G R E D I E N T S :::
1 head of cauliflower
1 Delacotta squash
1 large red, white or yellow onion
2 handfuls of small potatoes
5-7 fresh garlic cloves
2 tsp choice adaptogen blend
plenty of choice herb(s) (Thyme is a go-to, and pairs well with everything.— fresh or dried)
3/4 cup orzo (or other grain/pasta such as any rice, Israeli cous cous, barley, etc.)
3 handfuls fresh spinach leaves
water & bouillon, any bone broth, chicken broth, veggie broth, beef broth etc. (to cover all veggies in your soup pot)
3 glugs of avocado oil
Chop all veggies into chunks. Place in a large bowl and toss with thyme, avocado oil, salt and pepper, and hint of rosemary. (Get all veggies covered with the oil and herbs etc.)
Roast at 450F for 30-45 minutes. (30-35 minutes if veggies are in small chunks, and 40-45 if in large chunks.)
Throw in a big pot and cover veggies amply with water and bouillon, or bone broth. Add a few tsps choice adaptogens :) and bring to a boil for 5 minutes, add orzo, and spinach leaves, and bring down to a simmer for 30 minutes. Turn off and let sit uncovered for 10 minutes. Serve and enjoy with buttered or ghee-ed sourdough or whole grain breads— I like having a bit of both, cozy feet, some candlelight, and the window open a bit :)! (Especially enjoyed the next day after the flavors have been sitting together overnight.) 🤍
