Mineral-replenishing Miso Soup
Chilly fall days ask for a quick, lovely cup of deeply nourishing and immune-boosting miso soup with kombu seaweed. (You can buy the below ingredients at most natural foods stores.)
For single serving: prepare in your favorite ceramic cup. For multiple servings: prepare in a saucepan.
Kombu seaweed (tear and add if want to eat seaweed, or steep a chunk of it if you want all of the seaweed’s nutrients but don’t like the taste or texture of it)
1/2 tsp. Anoint Daily adaptogen blend
Purified boiled water
*Put a tablespoon to start —and more to taste— of miso paste into your cup, 1/2 tsp of your AD adaptogen blend, and your torn pieces or chunk of kombu. Fill cup with boiling water, stir, and let steep for 10-15 minutes. (The steeping process will allow your soup to absorb the mineral-rich nutrients from the seaweed— minerals such as iodine, magnesium, calcium, iron, silicon, and also vitamins A & C that many of us tend to be deficient in.) Give another quick stir and enjoy.
I kept it super simple this time, but if you want to make this into more of a meal you can add:
eggs or egg replacement
frozen peas
stir fried veggies
kimchi topping
