Pancakes & London Fog
This is one of my favorite late morning breakfasts. Please enjoy.

Pancakes
ingredients
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 tablespoon white cane sugar
¼ teaspoon salt, or more to taste
1 ¼ cups choice milk
3 tablespoons butter, melted OR choice butter alternative
1 egg OR Vegan option: 1 tbsp flaxseed meal mixed w/ 3 tbsp water (Let sit for 5 minutes before adding to wet mixture)
MAKE THEM ADAPTOGENIC and bio-dynamic!— add 1 tsp of your choice anoint daily powders!
directions
Whisk together dry ingredients in a large bowl. Make a well in the center and add milk, melted butter, and egg; mix until smooth. Immersion blend or power whisk mixture for a minute or two until extra frothy smooth!
Heat a lightly oiled griddle or pan over medium-high heat. Pour or scoop (I like to use your 1/3 cup measuring cup) the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.
Garnish with warm raspberries and maple syrup, lemon zest and powdered sugar, or french vanilla yogurt etc etc. Get creative.
London Fog
ingredients
1 tbsp earl grey or a black tea
1/4 cup choice milk
1 extra full tsp honey or maple syrup
directions
Steep cup of tea with 205F water, covered. Mix in milk and honey or maple syrup, or for an extra special treat, froth together. Pour into your favorite vessel and enjoy outside or with a view of something that invokes beauty for you.
